Chef Josh Dorcak is the creative force behind MAS, Ashland’s intimate izakaya-style restaurant known for blending Pacific Northwest ingredients with Japanese technique and sensibility. A chef with deep roots in Southern Oregon, Dorcak’s cooking reflects both a reverence for local farms and forests and a restless drive to innovate. His menus are composed with painterly precision—at once minimal and expressive—showcasing the region’s seafood, wild mushrooms, and seasonal produce through a lens of modern Japanese cuisine.

Dorcak has earned a devoted following for his ability to transform familiar ingredients into unexpected experiences, honoring tradition while pushing boundaries. Under his guidance, the restaurant has become a destination for adventurous diners, a place where hospitality meets artistry and every dish tells the story of both the chef and the land he calls home.

Andy Peterson is a self-taught chef with over twenty years of experience in kitchens across the U.S. and New Zealand. Over the past two years as Chef de Cuisine at MÄS, he has collaborated closely with Chef Josh, discovering a shared vision for thoughtful, ingredient-driven cuisine. At KANDŌ, Andy brings his passion for modern American, Spanish, and Japanese flavors while exploring the Scandinavian roots of his heritage—all in a relaxed, approachable attitude that invites guests to thoroughly enjoy every bite.

With over two decades behind the bar, Matt Fleeger has honed his craft in some of the most acclaimed cocktail destinations in the Bay Area, Oregon, and Southern California—including San Francisco’s celebrated 15 Romolo, ranked among the world’s top 50 bars. Known for his inventive, custom cocktails and an easy, welcoming style of service, Matt creates drinks that are as memorable as the moments they accompany. At KANDŌ, his focus is on delivering not just exceptional cocktails, but the kind of warm, intuitive hospitality that defines the experience.

Heidi La Pointe

SOMMELIER

A Lake Tahoe native, Heidi La Pointe’s love for food and wine was shaped by the region’s breathtaking mountain landscapes and its proximity to world-renowned wine country. Over more than two decades in hospitality, she has brought warmth, precision, and expertise to roles ranging from fine dining server to Front of House Manager and Wine & Beverage Director. An Advanced Sommelier certified by the Court of Master Sommeliers, Heidi also holds a WSET Level 3 Award in Wines and is a certified Napa Valley Wine Expert through the Napa Valley Wine Academy. Her dedication to excellence has earned her the Wine Spectator Award of Excellence, but it is her intuitive, guest-focused approach—making every pour and pairing feel personal—that truly defines her craft.
